             Here’s a recipe to tickle your taste buds without ruining your weight loss.

Lemon and Grape Cheesecake

Serves 8

Takes 20 minutes to prepare – 2 hrs to chill

 3 points per serving ( 178 calories per serving)

Ingredients:

11.5g sachet lemon and lime sugar free jelly

150 ml (5fl oz) boiling water

Finely grated zest and juice of lemon

150g (5 ½ oz) low fat digestive biscuits, crushed

60g (2oz) low fat spread, melted

200g (7oz) low fat natural yogurt

200g (7oz) low fat soft cheese

200g (7oz) red and green seedless grapes, halved

Method:

1. Dissolve the jelly in boiling water and add the lemon zest and juice.  Leave to cool to room temperature.

2. Mix the biscuit crumbs and low fat spread together and press firmly into a 20cm (8 inch) loose bottom cake tin.  Chill in the freezer for about 10 minutes.

3. In a large bowl, whisk the yogurt and soft cheese together until smooth and then stir in the cooled jelly mixture.  Pour over the biscuit base, cover and chill in the fridge for 2 hours, or until set.

4. Remove the cheesecake from the tin and top with the halved grapes to serve.

Enjoy for only  3 points values per serving.
