SEP 09 NEWS FROM HEACHAM SLIMMING WORLD

The summer is almost over again as I write this and soon our thoughts will be turning to Autumn and misty mornings and chilly evenings. Dare I mention it we have only 16 weeks to Christmas! Holidays are over for most of us and the children are going back to school.  What better time to think about losing a few pounds - or stones as the case may be. Just 1lb a week will show a weight loss of over a stone before Christmas.

No need to feel nervous someone will meet you at the door and make you a cup of tea to welcome you, so come along to St Mary’s Church Hall in the High Street in Heacham at 6 30 p.m. on any Tuesday evening and I will be pleased to tell you all about the plan and how you really can lose that weight! You even have the opportunity to sit through group on your first night before you decide to join us.

My recipe for this month is a great one for chilly evenings.

Onion and Potato Tortilla

3 onions

3 medium sized potatoes

2 garlic cloves

6 eggs

A handful of fresh parsley

Fry Light

Salt and pepper

 

Peel and roughly chop the onions. Peel and cut the potatoes into ½ inch cubes. Peel and finely chop the garlic. Beat the eggs. Finely chop the parsley.

Spray a non stick frying pan with Fry Light. Add the onions and potatoes and cook over a medium heat for 12 – 15 minutes, or until softened, stirring often. Add the garlic and mix well.

Mix the parsley with the eggs and season. Pour into the pan, tilting the pan so the egg is spread evenly. Cook gently for  8 – 10 minutes or until the tortilla is set at the bottom.

Place the pan under a medium – hot grill. Cook for 5 minutes until the top is golden.

Allow to cool slightly, cut into wedges. Enjoy !
